  • 1 cup grated zucchini, excess moisture squeezed out
  • 1 cup butterscotch chips

Instructions

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  • In a large bowl, cream the butter and brown sugar with a mixer until fluffy. Beat in the egg and vanilla extract until smooth.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  • Fold in the grated zucchini and butterscotch chips, ensuring even distribution.
  • Spread the batter evenly in the prepared pan. Smooth the top with a spatula.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes before transferring to a wire rack. Let cool completely before cutting into squares.

1️⃣ Drain the Zucchini Well: After grating the zucchini, squeeze out as much moisture as possible using a clean towel or cheesecloth. This step prevents the batter from becoming too wet and ensures chewy, not soggy, blondies.

2️⃣ Don’t Overmix the Batter: When combining the wet and dry ingredients, mix just until everything is incorporated. Overmixing can result in dense, tough blondies instead of a soft, chewy texture.
