Description
Old Fashioned Chicken & Dumplings with tender shredded chicken and flat dumplings simmered in rich chicken broth.
Ingredients

- 2–3 chicken breasts
- 2 tablespoons avocado or olive oil
- Salt and pepper to taste
- 2 quarts chicken broth
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 2 tablespoons cold salted butter, cubed
- 1 cup milk
- Additional flour for rolling
Instructions
- Preheat oven to 350°F and bake seasoned chicken breasts for 45 minutes until internal temperature reaches 165°F, then shred.
- Warm chicken broth in a large pot over medium heat.
- Combine flour and baking powder, cut in butter until crumbly, then stir in milk to form dough.
- Roll dough to 1/4-inch thickness and cut into squares.
- Bring broth to a boil and add shredded chicken.
- Add dumplings one at a time, stirring frequently.
- Simmer 15-20 minutes until dumplings are cooked through and broth thickens.
Notes
- This version traditionally does not include vegetables but peas and carrots can be added if desired.
