Description

The Chicken Avocado Melt Sandwich is everything you want in a comfort food lunch—juicy chicken, creamy avocado, and melty cheese layered between golden, toasted bread. Quick to prepare and café-worthy in flavor, this sandwich is hearty enough for a main meal yet simple enough for busy weekdays.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb)

  • Salt and pepper, to taste

  • 1 tbsp olive oil

  • 1 ripe avocado, sliced

  • 4 slices cheese (Swiss, cheddar, or provolone)

  • 4 slices bread (sourdough, ciabatta, or your choice)

  • 2 tbsp mayonnaise

  • 1 tbsp Dijon mustard

  • 1 small red onion, thinly sliced

  • 1 tomato, sliced

  • 1 tbsp butter or olive oil (for grilling)


Instructions

  • Cook Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high. Cook 6–7 minutes per side until fully cooked. Rest 5 minutes, then slice thin.

  • Prep Veggies: Slice avocado, red onion, and tomato.

  • Make Spread: Mix mayonnaise and Dijon mustard. Spread on all bread slices.

  • Assemble Sandwiches: Layer chicken, avocado, cheese, onion, and tomato on two slices of bread. Top with remaining slices, spread-side down.

  • Grill Sandwiches: Heat butter or oil in a skillet. Cook sandwiches 3–4 minutes per side, pressing gently, until golden and cheese is melted.

  • Serve: Let rest 1 minute before slicing in half. Serve warm.

Pound chicken to even thickness for quicker cooking.
