Ingredients

2 boneless skinless chicken breasts

Salt and pepper to taste

1 tablespoon olive oil

1 avocado, sliced

4 slices cheese (Swiss, cheddar, or provolone)

4 slices bread (sourdough, ciabatta, or your choice)

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 small red onion, thinly sliced

1 tomato, sliced

Butter or olive oil for grilling


Instructions

1. Season the chicken breasts with salt and pepper on both sides.

2. Heat the olive oil in a skillet over medium-high heat.

3. Cook the chicken breasts for about 6-7 minutes per side until fully cooked. Rest, then slice thinly.

4. Slice the avocado and prepare the cheese slices.

5. Spread mayonnaise and Dijon mustard on each slice of bread.

6. Layer chicken, avocado, cheese, onion, and tomato on two slices of bread.

7. Top with remaining bread, mayo side down.

8. Heat a skillet with butter or olive oil. Grill sandwiches 3-4 minutes per side until golden.

9. Let cool briefly, slice, and serve warm.

Notes
