Ingredients

  • 12 oz (340g) penne pasta
  • 2 chicken breasts, cubed
  • 6 slices of bacon, cooked and crumbled
  • 2 cups heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 packet ranch seasoning mix (or 2 tbsp homemade mix)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the Bacon: In a large skillet, cook the bacon over medium heat until crispy. Remove and place on a paper towel to drain. Once cooled, crumble into pieces.
  • Cook the Chicken: In the same skillet, heat olive oil over medium-high heat. Season the cubed chicken with salt and pepper. Cook for 5-7 minutes, turning occasionally, until golden brown and fully cooked. Remove and set aside.
  • Make the Sauce: Lower the heat to medium and pour the heavy cream into the skillet. Add the ranch seasoning mix and stir well. Let the sauce simmer for 3-5 minutes, stirring occasionally. Gradually add the shredded cheddar cheese, stirring until smooth and creamy.
  • Combine Everything: Add the cooked pasta, chicken, and half of the crumbled bacon to the skillet. Toss everything together until evenly coated with the sauce.
  • Serve: Transfer to a serving dish and top with the remaining bacon. Garnish with fresh parsley if desired. Serve hot and enjoy!

Notes

  • Control the Sauce Consistency: If the sauce seems too thick, add a splash of pasta water or milk to thin it out. This keeps it creamy and ensures it coats the pasta evenly.
  • Use Freshly Grated Cheese: Pre-shredded cheese contains anti-caking agents that can affect the creaminess of the sauce. For the best texture and flavor, grate the cheese fresh.
  • Cook Bacon Separately: Avoid cooking chicken and bacon together to maintain crispness. Use the rendered bacon fat to enhance the flavor of the chicken or sauce if desired.
