Description

A hearty Chicken Burrito Casserole packed with chicken, rice, black beans, corn, green chiles, and melted cheese.


Ingredients

  • 1/2 cup finely diced onion
  • 1 red bell pepper diced
  • 1 cup uncooked parboiled long-grain brown rice
  • 3 tablespoons fajita seasoning
  • 1/8 teaspoon cayenne pepper
  • 1 cup frozen corn kernels
  • 1 can black beans drained and rinsed
  • 5 cups shredded chicken
  • 3 cups reduced-sodium chicken broth
  • 1 can mild green chiles
  • 1 tablespoon tomato paste
  • 2 tablespoons olive oil
  • 1 1/4 cups Monterey Jack cheese

Instructions

  1. Preheat oven to 400°F.
  2. Combine onion, bell pepper, rice, fajita seasoning, and cayenne in a 9×13-inch baking dish.
  3. Whisk broth, green chiles, tomato paste, and olive oil together.
  4. Pour liquid mixture into baking dish.
  5. Add chicken, black beans, and corn and stir well.
  6. Cover with foil and bake 65 to 70 minutes.
  7. Remove foil and top with cheese.
  8. Bake 5 to 10 minutes until cheese melts.
  9. Rest 5 to 10 minutes before serving.

Notes

  1. If casserole looks soupy, continue baking until liquid absorbs.
  2. Rotisserie chicken works well.
  3. Top with cilantro, green onions, salsa, or avocado.
