A hearty Chicken Burrito Casserole packed with chicken, rice, black beans, corn, green chiles, and melted cheese.
Ingredients

- 1/2 cup finely diced onion
- 1 red bell pepper diced
- 1 cup uncooked parboiled long-grain brown rice
- 3 tablespoons fajita seasoning
- 1/8 teaspoon cayenne pepper
- 1 cup frozen corn kernels
- 1 can black beans drained and rinsed
- 5 cups shredded chicken
- 3 cups reduced-sodium chicken broth
- 1 can mild green chiles
- 1 tablespoon tomato paste
- 2 tablespoons olive oil
- 1 1/4 cups Monterey Jack cheese
Instructions
- Preheat oven to 400°F.
- Combine onion, bell pepper, rice, fajita seasoning, and cayenne in a 9×13-inch baking dish.
- Whisk broth, green chiles, tomato paste, and olive oil together.
- Pour liquid mixture into baking dish.
- Add chicken, black beans, and corn and stir well.
- Cover with foil and bake 65 to 70 minutes.
- Remove foil and top with cheese.
- Bake 5 to 10 minutes until cheese melts.
- Rest 5 to 10 minutes before serving.
Notes
- If casserole looks soupy, continue baking until liquid absorbs.
- Rotisserie chicken works well.
- Top with cilantro, green onions, salsa, or avocado.
