  • 2 boneless, skinless chicken breasts

  • 225 g (8 oz) egg noodles or pasta of choice

  • 60 g (4 tbsp) unsalted butter

  • 3 cloves garlic, minced

  • 5 ml (1 tsp) dried thyme (or 10 ml/2 tsp fresh thyme)

  • 5 ml (1 tsp) dried parsley (or fresh parsley, for garnish)

  • 15 ml (1 tbsp) olive oil

  • 240 ml (1 cup) chicken broth (low-sodium preferred)

  • 120 ml (½ cup) heavy cream

  • Salt and black pepper, to taste

  • Optional: grated parmesan cheese

  • Optional: red pepper flakes


Instructions

eat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and thyme. Cook 5–6 minutes per side until golden and fully cooked. Remove, rest, and slice.

2. Boil the Noodles
Cook pasta in salted water until al dente. Drain and reserve ½ cup pasta water.

3. Make the Sauce
In the same skillet, melt butter. Scrape up any browned bits. Add garlic and sauté for 1 minute. Stir in chicken broth and simmer 3–4 minutes. Add heavy cream and cook 3–4 more minutes until slightly thickened.

4. Combine
Toss cooked noodles in the sauce, adding reserved pasta water for creaminess. Return sliced chicken to the skillet and mix well.

5. Serve
Adjust seasoning to taste. Garnish with parsley, grated parmesan, and red pepper flakes if desired.

Notes

Don’t skip searing the chicken—it adds depth and flavor.

Save pasta water—it helps emulsify and extend the sauce.

Swap heavy cream with half-and-half or more broth for a lighter version.

Egg noodles are traditional, but other shapes like fettuccine or penne work too.

Add spinach, peas, or mushrooms to sneak in veggies.
