Description

The Chicken Chalupa is a flavorful fusion of traditional Mexican street food and modern culinary creativity. Featuring a crispy fried shell filled with seasoned chicken, lettuce, tomatoes, cheese, and a creamy avocado ranch sauce, this dish delivers bold textures and rich, savory notes in every bite. Perfect for weeknight dinners or casual gatherings, it’s a handheld meal that’s satisfying and endlessly customizable.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (or thighs)

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • 1 tablespoon olive oil

  • 1 cup shredded lettuce

  • 1 medium tomato, diced

  • ½ cup shredded cheese (cheddar, Monterey Jack, or blend)

  • 4 chalupa shells (homemade or store-bought)

  • ¼ cup avocado ranch dressing (or sour cream)

For homemade chalupa shells:

  • 1 cup masa harina or wheat flour

  • ⅓ cup warm water

  • Pinch of salt

  • Oil for frying

Instructions

  • Marinate Chicken: In a bowl, mix cumin, paprika, garlic powder, and salt. Coat the chicken evenly and marinate for at least 30 minutes.

  • Cook Chicken: Heat olive oil in a skillet over medium heat. Cook chicken 5–7 minutes per side until fully cooked. Let rest, then shred or slice.

  • Make Shells (if homemade): Combine masa harina (or flour), warm water, and a pinch of salt into a dough. Divide and roll into small circles. Fry in oil until golden and crisp. Drain on paper towels.

  • Assemble Chalupas: Fill each shell with shredded chicken, lettuce, diced tomato, and cheese.

  • Top and Serve: Drizzle with avocado ranch dressing or a sauce of your choice. Serve immediately while warm and crispy.

Notes

Grill the chicken for a lower-fat version.

Substitute chicken with beans or grilled vegetables for a vegetarian option.

For extra flavor, add pickled jalapeños, onions, or salsa.

You can make the shells ahead and reheat in the oven for a quick assembly.
