A quick and flavorful Chicken Cheesesteak Skillet made with tender chicken, peppers, onions, and melted provolone cheese in one pan.

- 2 tablespoons olive oil, divided
- 1 yellow onion, halved and thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon smoked paprika
- Kosher salt to taste
- Fresh ground black pepper to taste
- 1 cup shredded provolone cheese
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- Add onion, red pepper, green pepper, salt, and pepper. Cook until tender.
- Remove vegetables from the skillet and set aside.
- Add remaining olive oil to the skillet.
- Add sliced chicken, Italian seasoning, smoked paprika, salt, and pepper.
- Cook chicken in a single layer until browned and fully cooked.
- Return vegetables and any juices to the skillet.
- Stir to combine.
- Top with shredded provolone cheese.
- Cover with a lid and cook until the cheese melts.
- Serve immediately.
Notes
- Slice chicken and vegetables thinly for even cooking.
- Do not overcrowd the skillet.
- Store leftovers in the refrigerator for up to 4 days.
