Description

Creamy Chicken Cobbler combines shredded rotisserie chicken, mixed vegetables, savory gravy, and a golden Cheddar Bay biscuit topping in one easy 9×13-inch casserole.


Ingredients

  • 1/2 cup unsalted butter
  • 4 cups shredded rotisserie chicken
  • 1 15-ounce bag frozen mixed vegetables
  • 1 11.36-ounce package Cheddar Bay biscuit mix, including seasoning packet
  • 2 cups whole milk
  • 1 10.5-ounce can condensed cream of chicken soup
  • 2 cups chicken stock
  • 2 tablespoons chopped fresh parsley, optional
  • 1/2 teaspoon garlic powder, optional
  • 1/4 teaspoon black pepper, optional

Instructions

  1. Preheat the oven to 375°F.
  2. Place the butter in a 9×13-inch baking dish and put the dish in the oven until the butter melts.
  3. Shred the rotisserie chicken into bite-size pieces and remove any skin or bones.
  4. Stir the biscuit mix, seasoning packet, milk, garlic powder, and black pepper in a medium bowl until blended.
  5. Whisk the condensed cream of chicken soup and chicken stock in a second bowl until smooth.
  6. Spread the shredded chicken evenly over the melted butter without stirring.
  7. Scatter the frozen mixed vegetables evenly over the chicken.
  8. Pour the biscuit mixture over the vegetables and spread it lightly without stirring.
  9. Pour the soup and stock mixture evenly over the biscuit layer without stirring.
  10. Bake uncovered for about 45 minutes, until the topping turns deeply golden and the edges bubble.
  11. Remove the casserole from the oven and sprinkle it with chopped parsley.
  12. Let the Chicken Cobbler rest for 10 minutes before serving.

Notes

  1. Keep the frozen vegetables frozen to prevent excess moisture.
  2. Do not stir the layers after placing them in the baking dish.
  3. Use a standard 9×13-inch baking dish for even cooking.
  4. The center may jiggle slightly when the casserole leaves the oven.
  5. Taste the chicken before adding extra salt because the soup, stock, and biscuit seasoning contain sodium.
