Description

This Chicken Lo Mein is a quick homemade dinner with tender chicken, vegetables, and noodles tossed in a savory sauce.


Ingredients

Scale
  • 1 tablespoon canola oil
  • 1 pound chicken breasts, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 2 tablespoons low sodium soy sauce
  • 8 ounces mushrooms, sliced
  • 1 small onion, chopped
  • 1 1/2 cups Napa cabbage, shredded
  • 1 cup matchstick carrots
  • 1/4 cup low sodium chicken broth
  • 1 teaspoon cornstarch
  • 1 tablespoon sesame oil
  • 1/4 cup low sodium soy sauce
  • 1 teaspoon light brown sugar
  • 12 ounces pasta, cooked

Instructions

  1. Heat oil in a pan over medium-high heat.
  2. Cook chicken until browned, then remove.
  3. Sauté garlic and ginger until fragrant.
  4. Add vegetables and stir-fry briefly.
  5. Whisk sauce ingredients together.
  6. Return chicken and noodles to pan.
  7. Pour sauce over and toss until combined.

Notes

  1. Add other vegetables as desired.
  2. Adjust seasoning to taste.
  3. Use gluten free noodles if needed.
