  • 1 cup panko bread crumbs
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 4 tablespoons unsalted butter, melted
  • 2 cloves garlic, finely minced
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F and lightly grease a loaf pan.
  2. Prepare all ingredients by mincing the garlic and measuring everything ahead of time.
  3. In a large bowl, gently combine ground chicken, panko, Parmesan, garlic, eggs, milk, parsley, salt, pepper, and Italian seasoning until just mixed.
  4. Transfer the mixture to the prepared loaf pan and shape it evenly.
  5. In a small bowl, mix melted butter, garlic, and Parmesan for the topping.
  6. Spoon the garlic butter mixture evenly over the meatloaf.
  7. Bake for 60–70 minutes until the internal temperature reaches 165°F.
  8. Remove from the oven and let rest for 10 minutes before slicing and serving.

Notes

  1. Do not overmix the meatloaf mixture or it may become dense.
  2. Use a meat thermometer to confirm the meatloaf reaches 165°F.
  3. Allow the meatloaf to rest before slicing to retain moisture.
