- 1 cup frozen peas
- 1 cup carrots, chopped
- 1/2 cup celery, chopped
- 1 small onion, diced
- 1/4 cup butter
- 1/4 cup flour
- 2 cups chicken broth
- 1 cup milk or cream
- 1 teaspoon garlic powder (optional)
- Salt and pepper to taste
- 1 package pie crusts (or homemade)
Instructions
- Prepare the filling:
Melt butter in a large pan over medium heat. Add onions and sauté until soft. Stir in carrots, celery, and peas. Cook for 5 minutes until veggies soften slightly. - Make the sauce:
Sprinkle flour over the vegetables and stir. Cook for 1 minute, then slowly whisk in chicken broth, ensuring no lumps form. Add milk or cream and continue stirring until the sauce thickens. Season with garlic powder, salt, and pepper. - Combine chicken:
Add the cooked chicken to the pan, mixing it thoroughly with the creamy sauce. Remove from heat. - Assemble the pie:
Preheat oven to 375°F (190°C). Place one pie crust in a 9-inch pie pan. Pour the chicken mixture into the crust. Cover with the second pie crust, crimping the edges to seal. Cut slits in the top for steam to escape. - Bake:
Bake for 30-35 minutes or until the crust is golden brown. If the edges brown too quickly, cover them with foil. Let the pie rest for 5-10 minutes before slicing and serving.
