Chicken Satay Bowls with tender spiced chicken, rice, and fresh vegetables make a balanced and flavorful meal.


Ingredients

Scale
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 2 teaspoons fresh garlic minced
  • 2 teaspoons ginger paste
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons yellow curry powder
  • 1 teaspoon turmeric
  • 2 teaspoons ground coriander
  • 2 teaspoons chili powder
  • 1/4 cup coconut milk
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons brown sugar or honey
  • Red pepper flakes to taste
  • Chopped cilantro
  • Lime juice
  • Chopped peanuts

Instructions

  1. Combine all marinade ingredients with chicken and mix well
  2. Thread chicken pieces onto skewers
  3. Heat skillet and cook chicken until golden and cooked through
  4. Remove from heat and finish with cilantro lime and peanuts
  5. Serve over rice with vegetables

Notes

  1. Chicken thighs stay juicier than breast
  2. Marinate longer for deeper flavor
  3. Serve with peanut sauce if desired
