Golden, crispy, and bursting with seasoned chicken and melted cheese, these Chicken Taquitos are a delicious snack, appetizer, or easy dinner. Perfectly paired with salsa, guacamole, or sour cream!
Ingredients
- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 cup salsa
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 8–10 corn tortillas
- Vegetable oil (for frying or brushing)
Instructions
- In a large bowl, mix shredded chicken, cheddar cheese, cream cheese, salsa, cumin, garlic powder, and chili powder until well combined.
- Warm tortillas slightly to make them pliable.
- Spoon 2-3 tablespoons of the chicken mixture onto each tortilla. Roll tightly and secure with a toothpick if needed.
- For Frying: Heat about 1 inch of vegetable oil in a skillet over medium heat. Fry taquitos for 2-3 minutes per side until golden and crispy. Drain on paper towels.
- For Baking: Preheat oven to 400°F (200°C). Place rolled taquitos on a baking sheet lined with parchment paper. Lightly brush with oil and bake for 15-20 minutes, turning halfway.
- For Air Frying: Preheat air fryer to 375°F (190°C). Place taquitos in the basket and cook for 7-10 minutes, flipping halfway.
- Serve hot with salsa, guacamole, or sour cream.
Notes
1️⃣ Prevent Soggy Taquitos: Ensure tortillas are warm and pliable before rolling to prevent cracking. If frying, drain excess oil on paper towels immediately after cooking.
2️⃣ Seal the Edges: Roll the taquitos tightly and place them seam-side down when baking or air frying to prevent them from unrolling during cooking.
