For the Chicken & Marinade:
- 2 boneless, skinless chicken breasts (sliced)
- 2 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp minced garlic
- 1 tsp minced ginger
For the Sauce:
- ¼ cup soy sauce (low sodium)
- 2 tbsp honey or brown sugar
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tbsp cornstarch mixed with 2 tbsp water
For the Noodles & Veggies:
- 8 oz noodles (udon, ramen, or lo mein)
- 1 cup broccoli florets
- ½ cup sliced bell peppers
- ½ cup julienned carrots
- 1 tbsp vegetable oil
For Garnish:
- 1 tbsp sesame seeds
- 2 tbsp chopped green onions
Instructions
- Marinate the Chicken – In a bowl, mix soy sauce, sesame oil, garlic, and ginger. Add sliced chicken and let it marinate for 10-15 minutes.
- Cook the Noodles – Prepare noodles according to package instructions. Drain and toss with a little sesame oil to prevent sticking.
- Stir-Fry the Chicken – Heat vegetable oil in a pan over medium-high heat. Add marinated chicken and cook for 5-7 minutes until golden brown and cooked through. Remove from pan.
- Cook the Vegetables – In the same pan, add a little more oil if needed. Stir-fry bell peppers, carrots, and broccoli for 3-4 minutes until slightly tender but still crisp.
- Make the Sauce – In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and cornstarch mixture. Pour into the pan with vegetables and stir until thickened.
- Combine Everything – Add cooked chicken and noodles to the pan. Toss everything together, ensuring the sauce coats the ingredients evenly.
- Garnish & Serve – Sprinkle with sesame seeds and chopped green onions. Serve hot and enjoy.
Notes
- Do Not Overcook the Noodles – Cook them until just al dente, as they will continue to absorb sauce when mixed with the other ingredients. Overcooked noodles can become mushy and affect the texture of the dish.
- Balance the Sauce to Your Taste – If you prefer a sweeter teriyaki sauce, add more honey or brown sugar. For a saltier kick, increase the soy sauce slightly. Adjusting the flavors ensures the dish suits your personal preference.
- Stir-Fry on High Heat for Best Texture – Cooking the chicken and vegetables over high heat helps achieve a nice sear on the chicken and keeps the vegetables crisp. Lower heat can cause the ingredients to steam rather than caramelize, which impacts flavor and texture.
