Description

Juicy boneless chicken thighs cook with ripe yellow peaches, honey, lemon juice, butter, and herbs in one skillet for a fast sweet-savory dinner.


Ingredients

  • 1.4 pounds boneless, skinless chicken thighs
  • 1/2 teaspoon chili powder, or more to taste
  • 1 teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 medium yellow peaches, washed, cored, and sliced
  • 3 tablespoons honey, or more to taste
  • Juice of 1/2 fresh lemon, or more to taste
  • 2 tablespoons butter
  • Fresh thyme, for topping

Instructions

  1. Pat the chicken thighs dry, then season both sides with chili powder, Italian seasoning, salt, and black pepper.
  2. Heat a 12-inch cast iron skillet or similar high-sided pan over medium heat for 2 minutes.
  3. Add olive oil, then place the chicken thighs in the skillet.
  4. Cook the chicken for 5 minutes without moving it so it can sear.
  5. Flip the chicken, reduce the heat to low-medium, and cook for about 5 more minutes, or until the internal temperature reaches 165°F.
  6. Transfer the chicken to a plate and keep the skillet on the stove.
  7. Add the sliced peaches to the same skillet over medium heat.
  8. Cook the peaches for about 5 minutes, stirring gently, until they soften slightly but still hold their shape.
  9. Add honey, lemon juice, and butter to the skillet, then stir until the sauce turns glossy.
  10. Return the chicken to the skillet and nestle it between the peaches.
  11. Warm everything briefly, spoon sauce over the chicken, and remove from heat.
  12. Top with fresh thyme and serve hot.

Notes

  1. Use ripe but firm peaches so they soften without turning mushy.
  2. Add extra lemon juice if the peaches taste very sweet.
  3. Add a little more honey if the peaches taste tart.
  4. Serve with rice, couscous, quinoa, mashed potatoes, salad, or crusty bread.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days.
