Ingredients

  • 6 oz (170g) boxed stuffing mix

  • ½ cup (115g) butter, melted

  • 45 cups (600–750g) zucchini, diced

  • 3 cooked boneless, skinless chicken breasts, diced

  • ½ cup (60g) shredded mozzarella (optional)

  • 1 can (10½ oz / 300g) cream of chicken soup

  • ½ onion (75g), diced

  • ½ cup (120g) sour cream


Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, combine stuffing mix with melted butter. Reserve ½ cup for topping.

  3. Add zucchini, chicken, mozzarella (if using), cream of chicken soup, onion, and sour cream. Stir well.

  4. Pour mixture into a greased 9×13-inch (23×33 cm) baking dish and spread evenly.

  5. Sprinkle reserved stuffing mixture over the top.

  6. Bake uncovered for 40–50 minutes, until bubbly and golden on top.

Notes

Dice zucchini evenly to ensure consistent texture.

Mozzarella is optional but adds melty richness.

Add garlic powder or Italian seasoning for an extra flavor boost.

Can be made with yellow squash instead of zucchini.
