A quick and healthy Chicken Zucchini Skillet recipe that combines tender chicken, zucchini, bell peppers, and tomatoes in one simple pan.

- 2 tablespoons olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 medium zucchinis sliced into half-moons
- 1 red bell pepper chopped
- 1 cup cherry tomatoes halved
- 1 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese optional
- Fresh basil for garnish optional
Instructions
- Heat olive oil in a large skillet over medium heat
- Add chicken pieces and season with garlic powder onion powder salt and pepper then cook for 5 to 7 minutes until browned and cooked through
- Add zucchini slices and chopped red bell pepper then sauté for 4 to 5 minutes until tender
- Stir in cherry tomatoes and Italian seasoning and cook for 2 to 3 minutes until tomatoes warm through
- Sprinkle Parmesan cheese over the skillet if desired and allow it to melt
- Remove from heat garnish with fresh basil and serve
Notes
- Do not overcrowd the skillet so the chicken browns properly
- Cook zucchini just until tender to keep a good texture
- Fresh basil added at the end gives the best flavor
