Description

Creamy macaroni and cheese combined with hearty beef chili and topped with melted cheddar cheese for the ultimate comfort food dinner.


Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1/2 cup bell pepper, diced
  • 3 cloves garlic, diced
  • 1.25 ounce chili seasoning mix
  • 1 tablespoon tomato paste
  • 8 ounces tomato sauce
  • 14.5 ounces diced tomatoes
  • 1/2 cup chicken broth
  • 15 ounce kidney beans, drained
  • 2 cups macaroni, uncooked
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1/2 cup heavy cream
  • 1 cup milk
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon hot sauce
  • 3 cups cheddar cheese, divided
  • Fresh parsley

Instructions

  1. Cook beef and onion until browned.
  2. Drain grease and add bell pepper and garlic.
  3. Add seasoning, tomato paste, tomato sauce, diced tomatoes, and broth.
  4. Simmer gently and add kidney beans during the final 10 minutes.
  5. Cook macaroni until al dente and drain.
  6. Make a cheese sauce with butter, flour, cream, milk, seasonings, and cheddar.
  7. Add macaroni to cheese sauce.
  8. Combine chili and macaroni mixture.
  9. Top with remaining cheddar cheese.
  10. Bake at 400 degrees Fahrenheit for 5 minutes.
  11. Garnish with parsley and serve.

Notes

  1. Do not overcook the pasta.
  2. Freshly shredded cheese melts best.
  3. Freeze extra chili for future meals.
  4. Add extra simmering time for thicker chili.
