Description
Chili Mac combines classic chili with creamy, cheesy macaroni in a quick one pot meal ready in 30 minutes.
Ingredients

- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 pound ground beef
- 1–2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 (28-ounce) can crushed tomatoes
- 1 (8-ounce) can tomato sauce
- 1 (14-ounce) can kidney beans, drained and rinsed
- 1 cup beef broth
- 8 ounces uncooked elbow macaroni
- 1 cup shredded cheddar cheese, divided
- 1 cup shredded mozzarella cheese, divided
- salt and pepper to taste
Instructions
- Heat olive oil and cook diced onion until soft
- Add garlic and bell pepper and cook until fragrant
- Add ground beef and cook until browned while breaking it apart
- Stir in chili powder, cumin, and smoked paprika and cook briefly
- Add crushed tomatoes, tomato sauce, kidney beans, and beef broth and bring to a boil
- Add macaroni, stir, reduce heat, and simmer until pasta is al dente
- Remove from heat and stir in cheddar and mozzarella gradually until melted
- Top with remaining cheese and cover until melted
- Season with salt and pepper and serve
Notes
- Add hot sauce or red pepper flakes for extra spice
- Substitute ground beef with turkey or vegetarian crumbles
- Use black beans or pinto beans as alternatives
