Description

Chili Relleno Dip is a creamy, cheesy Mexican appetizer made with roasted peppers, cream cheese, and Monterey Jack cheese, perfect for parties and gatherings.


Ingredients

  • 1 (8 oz) block cream cheese, softened
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 Anaheim or Poblano peppers
  • 1/4 cup Ranchero or enchilada sauce
  • 1 1/4 cups Monterey Jack cheese, shredded

Instructions

  1. Roast peppers until charred on all sides, then cover for 10 minutes, peel, remove seeds, and dice
  2. Preheat oven to 350°F
  3. Beat cream cheese, 1 cup shredded cheese, garlic powder, cumin, and cayenne until smooth
  4. Spread mixture into a shallow baking dish
  5. Top with Ranchero or enchilada sauce
  6. Bake for 10 minutes
  7. Remove, add diced peppers and remaining cheese
  8. Bake an additional 5 minutes until melted and bubbly
  9. Serve warm with tortilla chips

Notes

  1. Use poblano peppers for a richer flavor
  2. Make sure cream cheese is softened for smooth mixing
  3. Do not overbake to keep the dip creamy
