Description

Fresh Chipotle Corn Salsa made with sweet corn, roasted poblano pepper, jalapeños, cilantro, lemon, and lime. Perfect for burrito bowls, tacos, salads, or chips.


Ingredients

Scale
  • 2 bags frozen corn (14 ounces each)
  • 1 large poblano pepper
  • 1 small red onion, diced
  • 2 jalapeños, seeded and diced
  • 1/2 cup cilantro, finely chopped
  • Juice of 1 lemon
  • Juice of 1 lime
  • 2 teaspoons cumin
  • 1 teaspoon sea salt

Instructions

  1. Prepare corn according to package directions and cool completely.
  2. Roast poblano pepper over an open flame until blackened.
  3. Cover pepper in a bowl and rest for 10 minutes.
  4. Peel skin, remove seeds, and finely chop pepper.
  5. Combine corn, poblano, onion, jalapeños, cilantro, lemon juice, lime juice, cumin, and salt.
  6. Toss thoroughly until combined.
  7. Serve immediately or chill before serving.

Notes

  1. Allow corn to cool before mixing.
  2. For extra smoky flavor, lightly char some of the corn.
  3. Store in an airtight container for up to one week.
