Description
Fresh Chipotle Corn Salsa made with sweet corn, roasted poblano pepper, jalapeños, cilantro, lemon, and lime. Perfect for burrito bowls, tacos, salads, or chips.
Ingredients

- 2 bags frozen corn (14 ounces each)
- 1 large poblano pepper
- 1 small red onion, diced
- 2 jalapeños, seeded and diced
- 1/2 cup cilantro, finely chopped
- Juice of 1 lemon
- Juice of 1 lime
- 2 teaspoons cumin
- 1 teaspoon sea salt
Instructions
- Prepare corn according to package directions and cool completely.
- Roast poblano pepper over an open flame until blackened.
- Cover pepper in a bowl and rest for 10 minutes.
- Peel skin, remove seeds, and finely chop pepper.
- Combine corn, poblano, onion, jalapeños, cilantro, lemon juice, lime juice, cumin, and salt.
- Toss thoroughly until combined.
- Serve immediately or chill before serving.
Notes
- Allow corn to cool before mixing.
- For extra smoky flavor, lightly char some of the corn.
- Store in an airtight container for up to one week.
