Description

A crispy, golden-brown chicken breast seasoned with smoky chipotle, topped with creamy queso fresco, and nestled in a soft, toasted bun. This sandwich delivers the perfect balance of heat, crunch, and creaminess in every bite!

 


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup buttermilk
  • 1 tbsp chipotle powder
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 cup all-purpose flour
  • Vegetable oil (for frying)
  • 4 brioche sandwich buns
  • ½ cup queso fresco, crumbled
  • ¼ cup pickled onions (optional)
  • ¼ cup lettuce or tomato (optional)
  • 2 tbsp adobo sauce (from chipotle peppers in adobo)

Instructions

1️⃣ Marinate the Chicken – In a bowl, mix buttermilk, chipotle powder, garlic powder, paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes (preferably 1 hour).
2️⃣ Prepare the Coating – In a separate bowl, season the flour with salt and pepper. Remove chicken from marinade, letting excess drip off, and dredge in flour until well coated.
3️⃣ Fry the Chicken – Heat 1 inch of vegetable oil in a pan over medium-high heat. Once hot, fry chicken for 4-5 minutes per side until golden brown and crispy. Internal temp should reach 165°F (75°C). Drain on paper towels.
4️⃣ Toast the Buns – While the chicken rests, lightly toast the brioche buns in a dry pan or oven until golden.
5️⃣ Assemble the Sandwich – Spread adobo sauce on the bottom bun, place the crispy chicken on top, then add queso fresco, pickled onions, lettuce, or tomato. Cap with the top bun.
6️⃣ Serve & Enjoy – Pair with fries, coleslaw, or a refreshing lemonade for the ultimate meal.
