- 4 boneless, skinless chicken thighs or breasts (about 500g / 1.1 lb)
- 1 large mango, peeled and diced
- 2–3 chipotle peppers in adobo sauce
- 60ml (¼ cup) BBQ sauce
- 1 tbsp honey or brown sugar
- 1 tbsp apple cider vinegar
- 1–2 cloves garlic (optional)
- 1 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Prepare the sauce: In a blender, combine diced mango, chipotle peppers, BBQ sauce, honey, apple cider vinegar, and garlic. Blend until smooth. Taste and adjust spice or sweetness as needed.
- Marinate the chicken: Place the chicken in a dish or ziplock bag and coat with half of the sauce. Let it marinate in the fridge for at least 30 minutes (best if 2+ hours).
- Grill method: Preheat grill to medium-high heat. Grill chicken for about 6-8 minutes per side, basting with extra sauce, until internal temperature reaches 75°C (165°F).
- Oven method: Preheat oven to 200°C (400°F). Place marinated chicken on a lined baking sheet and bake for 20-25 minutes, brushing with more sauce. For crispy edges, broil for 2-3 minutes at the end.
- Pan-searing method: Heat 1 tbsp olive oil in a pan over medium-high heat. Cook chicken for 5-7 minutes per side, brushing with sauce, until golden and cooked through.
- Serve & enjoy! Garnish with fresh cilantro or lime wedges and serve with your favorite sides like grilled corn, coleslaw, or rice.
