- 4 large flour tortillas
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1 avocado, sliced
- 1 cup shredded Mexican blend cheese
- 1/2 cup sour cream (or Greek yogurt)
- 2 tbsp chipotle peppers in adobo sauce, minced
- 1/4 cup ranch dressing
Instructions
- Marinate the Chicken: Combine olive oil, garlic, lime juice, chili powder, and cumin in a bowl. Add chicken breasts, ensuring they’re well-coated. Let marinate for at least 30 minutes.
- Grill the Chicken: Preheat a grill or grill pan over medium heat. Cook chicken for 6–8 minutes per side until fully cooked. Remove and slice into thin strips.
- Prepare the Chipotle Ranch Sauce: In a small bowl, mix sour cream, ranch dressing, and minced chipotle peppers. Adjust the spice level to your preference.
- Prep the Fillings: Chop lettuce, dice tomatoes, and slice avocado. Warm the black beans and corn.
- Assemble the Burritos: Lay a tortilla flat. Add a layer of chicken, lettuce, tomatoes, black beans, corn, avocado slices, cheese, and a drizzle of chipotle ranch sauce.
