Description

Chocolate Cherry Coconut Truffles combine rich, creamy dark chocolate, sweet-tart maraschino cherries, and chewy coconut, resulting in a tropical and indulgent treat. These bite-sized truffles are perfect for any celebration or simply for a satisfying sweet indulgence. With their easy preparation and luxurious flavors, they are a hit at any occasion.


Ingredients

  • 8 oz dark chocolate (60% cocoa or higher)

  • 1/2 cup maraschino cherries (drained and finely chopped)

  • 1 cup sweetened shredded coconut (plus extra for coating)

  • 1/2 cup heavy cream

  • 1 tsp vanilla extract

Optional Add-ins:

  • 1/2 tsp almond extract

  • 1/4 cup chopped pecans or almonds

  • 1 tbsp cherry liqueur


Instructions

  • Prepare Cherry-Coconut Mixture: Drain maraschino cherries, finely chop them, and mix with shredded coconut in a bowl. Set aside.

  • Make the Ganache: Heat heavy cream in a small saucepan or microwave until it steams. Pour over chopped dark chocolate. Let sit for a minute, then stir until smooth. Add vanilla extract and stir again.

  • Chill Ganache: Place the ganache in the fridge for 1-2 hours until firm.

  • Form Truffles: Scoop small portions of the ganache and roll them into balls. Coat each ball with the cherry-coconut mixture.

  • Final Chill: Place truffles on a parchment-lined tray and refrigerate for 30 minutes to set.

Notes

For uniform truffles, use a melon baller or spoon.

Store in an airtight container in the fridge for up to a week. Truffles can also be frozen for up to 3 months.
