Description

Chocolate Cherry Muffins combine sweet Bing cherries and chocolate chips in soft, tender homemade muffins perfect for breakfast or dessert.


Ingredients

  • ⅔ cup all-purpose flour
  • ⅛ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ⅛ teaspoon salt
  • ¼ cup granulated sugar
  • 2 tablespoons unsalted butter, melted and slightly cooled
  • 2 tablespoons unsweetened full-fat canned coconut cream or dairy milk
  • 1 large egg white, room temperature
  • 2 tablespoons chocolate chips
  • ⅓ cup fresh cherries, pitted and halved

Instructions

  1. Preheat oven to 350°F and line 4 muffin cups with cupcake liners.
  2. Whisk together flour, baking soda, baking powder, salt, and sugar in a bowl.
  3. Create a small well in the center and add coconut cream and egg white.
  4. Fold wet and dry ingredients together gently.
  5. Stir in melted butter until no dry streaks remain.
  6. Fold in chocolate chips and cherries until just combined.
  7. Divide batter evenly into prepared muffin cups.
  8. Bake for 12 to 15 minutes until a toothpick inserted in the center comes out clean.
  9. Cool muffins on a wire rack before serving.

Notes

  1. Do not overmix the batter or the muffins may become dense.
  2. Pat cherries dry before adding them to the batter.
  3. Use dark chocolate chips for richer flavor.
  4. Store muffins in an airtight container for up to 2 days.
