Description

These Chocolate Chip Banana Bread Bars are soft, sweet, and easy to bake in a silicone granola bar mold. They make a fun breakfast, meal prep snack, or kid-friendly treat with ripe bananas, cinnamon, maple syrup, and semi-sweet chocolate chips.


Ingredients

  • 4 medium ripe bananas, mashed well
  • 1/2 cup melted coconut oil, preferably refined
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut sugar
  • 1/2 cup unsweetened almond milk
  • 1/4 cup pure maple syrup
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Place silicone granola bar molds on a large baking sheet.
  2. Add the bananas to a large bowl and mash well until mostly smooth.
  3. Add melted coconut oil, eggs, vanilla extract, coconut sugar, almond milk, and maple syrup. Mix until combined.
  4. Add flour, cinnamon, baking powder, baking soda, and salt. Stir gently until the batter comes together.
  5. Fold in the semi-sweet chocolate chips.
  6. Use a 1/4 cup scoop to portion batter into each granola bar mold cavity. Smooth the tops lightly if needed.
  7. Bake for about 30 minutes, or until the bars feel firm and a toothpick inserted into the center comes out clean.
  8. Let the bars cool in the mold for 10 minutes.
  9. Transfer the bars to a wire cooling rack and cool completely before serving or storing.

Notes

  1. Use very ripe bananas for the sweetest flavor and softest texture.
  2. Refined coconut oil gives a neutral taste, while unrefined coconut oil adds light coconut flavor.
  3. Do not overmix the batter after adding the flour.
  4. Store cooled bars in an airtight container at room temperature for 2 days or in the refrigerator for up to 5 days.
  5. Freeze cooled bars in a freezer-safe container with parchment between layers for easy grab-and-go snacks.
