Soft and fudgy chocolate sandwich cookies filled with creamy raspberry cream cheese frosting, perfect for Valentine’s Day or special occasions.

- 1 cup all-purpose flour
- 2/3 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 10 tablespoons unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup semi-sweet or dark chocolate chips
- 1 cup raspberries, fresh or frozen
- 6 tablespoons unsalted butter, softened
- 1 oz full-fat cream cheese
- 1 1/2 to 2 cups powdered sugar
- 1/4 teaspoon salt
Instructions
- Whisk together flour, cocoa powder, baking soda, and salt.
- Beat butter with brown sugar and white sugar until fluffy, then mix in egg and vanilla.
- Gradually mix dry ingredients into wet ingredients, then stir in chocolate chips.
- Cover and chill dough for 3 hours.
- Preheat oven to 350°F and line baking sheets.
- Roll dough into balls and bake for 8–10 minutes until set.
- Puree raspberries, strain seeds, and reduce puree until thick, then cool.
- Beat butter and cream cheese, then mix in powdered sugar, salt, and raspberry puree.
- Frost one cookie and sandwich with another.
Notes
- Chilling the dough is required for proper texture.
- Seedless raspberry jam can replace fresh berries if short on time.
- Store assembled cookies in the refrigerator for up to 4 days.
