Description

A vibrant and festive Christmas Salad with Honey Mustard Dressing featuring mixed greens, apples, avocado, pomegranate, and roasted nuts tossed in a sweet and tangy honey mustard vinaigrette.


Ingredients

1 1/2 cups raw walnuts

1/2 cup shelled pumpkin seeds

1/3 cup honey or maple syrup

1/4 teaspoon chipotle chili powder

6 cups mixed greens

2 cups Frisée

12 apples or pears, chopped

2 avocados, sliced

2 cups pomegranate arils

1 cup crumbled blue cheese, feta, or goat cheese

1/3 cup extra virgin olive oil

1/4 cup balsamic or apple cider vinegar

2 teaspoons Dijon mustard

2 tablespoons honey

1 tablespoon fig preserves

2 teaspoons orange zest + 2 tablespoons orange juice

Kosher salt and black pepper

Chili flakes


Instructions

1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Toss walnuts and pumpkin seeds with honey or maple syrup, chipotle chili powder, and a pinch of salt.

3. Bake for 15 minutes, stirring once halfway through, until the nuts are toasted and caramelized. Remove and sprinkle with flaky salt.

4. Add mixed greens and Frisée to a large salad bowl.

5. Top with chopped apples or pears, sliced avocados, and pomegranate arils.

6. Sprinkle on crumbled cheese and the roasted nuts.

7. In a jar, combine olive oil, vinegar, Dijon mustard, honey, fig preserves, orange zest, and orange juice. Shake well.

8. Season dressing with salt, pepper, and chili flakes.

9. Just before serving, drizzle dressing over the salad and gently toss. Serve immediately.

Notes

You can prepare the nuts and dressing a day ahead and store them separately.

For a vegan version, substitute honey with maple syrup.

Toss the salad right before serving to keep the greens fresh and crisp.
