Description

Frozen Chunky Monkey Banana Bites are easy no-bake treats made with banana slices, creamy peanut butter, and a crisp chocolate shell. They are kid-friendly, freezer-ready, and perfect for quick snacks or simple desserts.


Ingredients

  • 3 medium bananas, peeled
  • 1/4 cup creamy peanut butter, or your favorite nut butter
  • 11.5 ounces chocolate chips, milk, dark, semi-sweet, or white chocolate
  • 2 teaspoons coconut oil, optional
  • Optional toppings: crushed peanuts, chopped walnuts, flaky salt, mini sprinkles, or toasted coconut

Instructions

  1. Line a baking sheet with parchment paper and make sure it fits in your freezer.
  2. Peel the bananas and slice them into even 1/4-inch rounds.
  3. Arrange half of the banana slices on the lined baking sheet in a single layer.
  4. Warm the peanut butter in a microwave-safe bowl for 30 to 45 seconds, just until spreadable.
  5. Spoon about 1/2 teaspoon peanut butter onto each banana slice on the baking sheet.
  6. Top each peanut butter-covered slice with another banana slice to make small sandwiches.
  7. Freeze the stuffed banana bites for about 1 hour, or until firm.
  8. Place the chocolate chips in a microwave-safe bowl and add coconut oil, if using.
  9. Microwave in 20 to 30 second bursts, stirring after each burst, until the chocolate melts smooth.
  10. Use a fork to dip each frozen banana sandwich into the melted chocolate, letting the extra chocolate drip back into the bowl.
  11. Place each coated bite back on the lined baking sheet.
  12. Add optional toppings immediately before the chocolate sets.
  13. Freeze the coated banana bites for at least 1 more hour, or until solid.
  14. Transfer the frozen bites to a freezer-safe bag or airtight container until ready to serve.

Notes

  1. Use ripe but firm bananas for the best texture.
  2. Do not skip the first freeze, because firm banana sandwiches dip more easily.
  3. Add coconut oil to the chocolate if you want a smoother, thinner coating.
  4. Store the bites in the freezer, not the refrigerator.
  5. Let the bites sit at room temperature for 2 to 3 minutes before eating for the best texture.
