- 4 boneless skinless chicken thighs (about 1 lb)
- 2 tablespoons chopped cilantro
- 2 limes (juice and zest)
- 1 teaspoon salt
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground coriander
- 1 tablespoon oil

Instructions
- Mix oil, lime juice, zest, cilantro, and spices in a bowl
- Place chicken in a container and coat evenly with marinade
- Marinate for at least 30 minutes or up to 2 hours
- Preheat grill or campfire to medium heat
- Grill chicken 5 to 8 minutes per side until internal temperature reaches 165F
- Remove from grill and chop into bite-sized pieces
- Warm tortillas if desired
- Assemble tacos with chicken, pico de gallo, cheese, and cilantro
