Ingredients
-
1/2 cup (115g) unsalted butter, melted
-
1 cup (200g) granulated sugar
-
2 large eggs
-
1 tsp vanilla extract
-
1/2 tsp baking powder
-
1/4 tsp salt
-
1 cup (125g) all-purpose flour
For the Cinnamon Swirl:
-
2 tbsp (25g) granulated sugar
-
1 tbsp ground cinnamon
Instructions
-
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
-
In a large bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, whisking after each, then add vanilla extract.
-
Stir in baking powder and salt. Gradually fold in flour until just combined.
-
In a small bowl, mix cinnamon and sugar for the swirl.
-
Spread half of the blondie batter into the prepared pan. Sprinkle half the cinnamon-sugar mixture over it.
-
Gently spread the remaining batter on top and sprinkle with the remaining cinnamon-sugar.
-
Use a knife or toothpick to swirl the top layer for a marbled effect.
-
Bake for 25-30 minutes, until edges are golden and a toothpick inserted comes out clean.
-
Cool completely before slicing into squares.
Notes
Don’t overmix the batter to keep blondies soft and chewy.
Swirl the cinnamon layer well to distribute flavor in every bite.
For thicker bars, use a smaller pan and adjust baking time.
These blondies taste even better the next day as the flavors meld.
Optional mix-ins: white chocolate chips, nuts, or a cream cheese swirl.
