Description

A classic British dessert that’s rich, moist, and utterly indulgent! Sticky toffee pudding features a soft date sponge drenched in a luscious toffee sauce. Perfectly warm and comforting, it’s a must-try treat for any dessert lover.

 


Ingredients

For the sponge:

  • 200g dates, chopped
  • 200ml boiling water
  • 1 tsp baking soda
  • 85g butter, softened
  • 175g caster sugar
  • 2 large eggs
  • 200g self-raising flour
  • A pinch of salt

For the toffee sauce:

  • 200g brown sugar (light or dark)
  • 100g butter
  • 200ml double cream
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

1️⃣ Prepare the dates: Place the chopped dates in a bowl, pour boiling water over them, and stir in the baking soda. Let sit for 10 minutes until soft and syrupy.

2️⃣ Make the sponge: In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time. Sift in the flour and salt, then fold gently. Add the date mixture and stir until fully combined.

3️⃣ Bake the pudding: Pour the batter into a greased baking dish and bake at 180°C (350°F) for 30-35 minutes, or until a skewer inserted in the center comes out clean.

4️⃣ Prepare the toffee sauce: In a saucepan over medium heat, combine butter, brown sugar, and cream. Stir occasionally until the sugar dissolves. Simmer for 5 minutes until thickened, then stir in the vanilla and salt.

5️⃣ Assemble: Once the sponge is baked, poke a few holes in it and pour half of the warm toffee sauce over the pudding to let it soak in.

6️⃣ Serve: Slice and serve warm with the remaining toffee sauce drizzled on top. Pair with vanilla ice cream or custard for an extra indulgent treat!
