Ingredients

Scale
  • 1/2 cup graham crackers, crushed
  • 1 cup all-purpose flour
  • 1/3 cup white sugar
  • 1/2 cup butter, melted
  • 2 cups sweetened condensed milk
  • 1 cup full-fat coconut milk
  • 1/2 cup sour cream
  • 3/4 cup lime juice, freshly squeezed preferred
  • 2 tablespoons lime zest
  • 1 tablespoon coconut extract, optional
  • 2 to 3 drops green food coloring, optional
  • 1 cup sweetened shredded coconut

Instructions

  1. Preheat the oven to 350°F and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the crushed graham crackers, white sugar, all-purpose flour, and melted butter.
  3. Mix well, then press the crust firmly into the bottom of the parchment-lined pan.
  4. Bake the crust for 15 minutes.
  5. While the crust bakes, whisk together the sweetened condensed milk, full-fat coconut milk, sour cream, lime juice, and lime zest in a large bowl.
  6. Add coconut extract and green food coloring, if using, then whisk until smooth.
  7. Pour the filling over the baked crust.
  8. Bake for 15 more minutes.
  9. Remove the pan from the oven and sprinkle sweetened shredded coconut over the warm filling.
  10. Chill the bars in the refrigerator for at least 2 hours to set.
  11. Lift the bars from the pan using the parchment paper.
  12. Slice into 12 bars and serve chilled.
