Description

Chewy coffee cookies made with instant coffee, cinnamon, and chocolate chips.


Ingredients

Scale
  • 2 TBSP Instant coffee
  • 2 1/2 cups All-purpose flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1 tsp Salt
  • 1 tsp Ground cinnamon
  • 1 cup Unsalted butter, melted and cooled
  • 1 cup Brown sugar
  • 1/2 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs
  • 1 1/2 cups Semi-sweet chocolate chips

Instructions

  1. Blend instant coffee to a fine powder
  2. Sift flour and add coffee, baking soda, baking powder, salt, and cinnamon
  3. Mix melted butter, brown sugar, white sugar, vanilla, and eggs
  4. Add dry ingredients and mix until combined
  5. Stir in chocolate chips
  6. Preheat oven to 350°F and line two cookie sheets
  7. Scoop dough into balls and top with extra chocolate chips
  8. Bake 12–14 minutes until edges are golden
  9. Let cookies cool on the pan for 5 minutes, then move to a rack

Notes

  1. Measure flour correctly to avoid dry cookies
  2. Add 2 TBSP extra flour for high altitude
  3. Bring dairy to room temperature before baking
