Description
Chewy coffee cookies made with instant coffee, cinnamon, and chocolate chips.
Ingredients
Scale
- 2 TBSP Instant coffee
- 2 1/2 cups All-purpose flour
- 1/2 tsp Baking soda
- 1/2 tsp Baking powder
- 1 tsp Salt
- 1 tsp Ground cinnamon
- 1 cup Unsalted butter, melted and cooled
- 1 cup Brown sugar
- 1/2 cup White granulated sugar
- 1 tsp Pure vanilla extract
- 2 Large eggs
- 1 1/2 cups Semi-sweet chocolate chips
Instructions
- Blend instant coffee to a fine powder
- Sift flour and add coffee, baking soda, baking powder, salt, and cinnamon
- Mix melted butter, brown sugar, white sugar, vanilla, and eggs
- Add dry ingredients and mix until combined
- Stir in chocolate chips
- Preheat oven to 350°F and line two cookie sheets
- Scoop dough into balls and top with extra chocolate chips
- Bake 12–14 minutes until edges are golden
- Let cookies cool on the pan for 5 minutes, then move to a rack
Notes
- Measure flour correctly to avoid dry cookies
- Add 2 TBSP extra flour for high altitude
- Bring dairy to room temperature before baking
