Instructions

  1. Pat the pork tenderloin dry and cut it into even 1-inch cubes.
  2. Place the pork in a medium bowl and add the flour, paprika, salt, and black pepper. Toss until every piece is evenly coated.
  3. Cook the egg noodles or rice according to the package directions and keep warm.
  4. Heat a large skillet over medium heat and melt the butter.
  5. Add the seasoned pork in a single layer and sauté for 4 to 5 minutes, turning occasionally, until lightly browned.
  6. Pour in the heavy cream and stir while scraping the browned bits from the bottom of the skillet.
  7. Bring the cream to a gentle boil, then cook uncovered for 5 to 7 minutes, stirring often, until the sauce thickens slightly and the pork reaches 145°F.
  8. Remove the skillet from the heat and spoon the creamy paprika pork over the warm noodles or rice.
  9. Sprinkle with minced fresh parsley before serving, if desired.

Notes

  1. Cut the pork into evenly sized cubes so all the pieces cook at the same rate.
  2. Use sweet paprika for a mild, traditional flavor, or replace 1 teaspoon with smoked paprika for a deeper taste.
  3. Pat the pork dry before seasoning so it browns instead of steaming.
  4. Do not crowd the skillet, and avoid cooking the pork beyond 145°F so it stays tender.
  5. Store the pork and sauce separately from the noodles or rice in an airtight container for up to 3 days.
  6. Reheat gently over low heat with a small splash of cream, milk, or broth to loosen the sauce.
