  • For the Cookie Base:

    • 1 ½ cups all-purpose flour

    • ½ cup unsweetened cocoa powder

    • 1 teaspoon baking powder

    • ½ teaspoon salt

    • 1 cup unsalted butter (softened)

    • ½ cup granulated sugar

    • ½ cup brown sugar

    • 2 large eggs

    • 1 teaspoon vanilla extract

  • For the Ganache:

    • 1 cup semi-sweet chocolate chips

    • ¼ cup heavy cream

  • Toppings:

    • ¼ cup rainbow candy-coated chips


Instructions

  • Prepare the Dough:

    • Cream together butter, brown sugar, and granulated sugar in a bowl until smooth and fluffy (about 2-3 minutes).

    • Add the eggs and vanilla extract, mixing until well combined.

    • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.

    • Slowly add the dry ingredients to the wet mixture, stirring until a thick dough forms. Do not overmix.

  • Bake the Cookies:

    • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

    • Use a cookie scoop to drop dough onto the baking sheet, spacing each cookie about 2 inches apart.

    • Bake for 10-12 minutes. The cookies should be set on the edges but still soft in the center.

    • Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

  • Prepare the Ganache:

    • In a microwave-safe bowl, combine chocolate chips and heavy cream.

    • Microwave in 20-second intervals, stirring in between, until fully melted and smooth.

  • Assemble the Cookies:

    • Once the cookies are completely cooled, spread a layer of ganache on top using an offset spatula.

    • Sprinkle rainbow candy-coated chips on top of the ganache while it’s still soft.

Notes

These cookies are best when they’re still soft in the center, so be sure not to overbake them.

You can add variations like mint extract, peanut butter, or even different colored candy-coated chips for a festive touch.

Store in an airtight container at room temperature for up to 4 days. These cookies also freeze well for up to 2 months.
