Description

This Country French Garlic Soup is rustic comfort in a bowl—made with roasted garlic, caramelized onions, and a creamy broth that feels both cozy and elegant. Perfect for chilly evenings or when you need a quick, flavorful dish that tastes like it came straight out of a countryside café.


Ingredients

  • 3 whole heads garlic, roasted

  • 1 tbsp (15 ml) olive oil

  • 1 tbsp (14 g) butter (optional)

  • 2 medium yellow onions, diced

  • 4 cups (960 ml) vegetable or chicken broth

  • 1 cup (240 ml) whole milk, heavy cream, or plant-based milk

  • 1 bay leaf

  • 1 tsp (2 g) fresh thyme leaves (or ½ tsp dried)

  • Salt and freshly ground black pepper, to taste

  • Fresh parsley, chopped, for garnish

  • Crusty bread or toasted baguette slices, for serving

  • Optional additions: splash of white wine, Parmesan rind, pinch of nutmeg


Instructions

  • Preheat oven to 375°F (190°C). Slice tops off garlic heads, drizzle with olive oil, wrap in foil, and roast 35–40 minutes. Cool, then squeeze out cloves.

  • In a large pot, heat olive oil and butter. Add onions and cook 15–20 minutes until caramelized.

  • Add roasted garlic, thyme, bay leaf, salt, and pepper. Pour in broth. Bring to a gentle boil, then simmer uncovered 15–20 minutes.

  • Remove bay leaf. Purée soup with immersion blender (smooth or rustic texture).

  • Stir in milk or cream, heat gently without boiling. Adjust seasoning.

  • Ladle into bowls, garnish with parsley, and serve with crusty bread.

Notes

Take time caramelizing onions—this adds depth.

Add white wine for richer flavor.

Blend to your preferred texture (chunky or smooth).

Vegan-friendly with olive oil and plant-based milk.

Freeze the base (without cream) for up to 3 months, then add cream when reheating.
