Description

Crispy Southern-style Country Fried Chicken made with tenderized chicken breasts, soaked in buttermilk, and fried to golden perfection. Perfect comfort food for family dinner with mashed potatoes and gravy.


Ingredients

  • 4 boneless skinless chicken breasts
  • Salt to taste
  • 2 large eggs
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons seasoned salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Vegetable oil for frying

Instructions

  1. Pound chicken breasts to 1/2 inch thickness.
  2. Whisk eggs, salt, and buttermilk and marinate chicken for 1-2 hours.
  3. Let chicken sit at room temperature for 30 minutes.
  4. Combine flour and seasonings in a bowl.
  5. Dredge chicken in flour mixture pressing firmly.
  6. Heat oil to 350 degrees Fahrenheit.
  7. Fry chicken 4-5 minutes per side until golden brown and cooked to 165 degrees internal temperature.
  8. Drain on wire rack before serving.

Notes

  1. Do not skip pounding the chicken for even cooking.
  2. Bread each piece right before frying.
  3. Maintain oil temperature at 350 degrees Fahrenheit.
  4. Serve with mashed potatoes and gravy.
