Description

Cowboy Corn Dip combines sweet corn, black beans, smoky bacon, jalapeño, red onion, and three cheeses in a rich, creamy no-cook appetizer. Serve it with tortilla chips, crackers, or fresh vegetables for parties, potlucks, cookouts, and game days.

  • 2 cans (15.25 ounces each) whole-kernel corn, drained well
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup mayonnaise
  • 4 ounces cream cheese, softened
  • 1 cup mild cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, finely grated
  • 1 large jalapeño, seeded and finely diced
  • 8 slices thick-cut bacon, cooked and crumbled
  • 1 medium red onion, finely diced, about 1/2 cup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • Chopped green onion, for garnish
  • Tortilla chips, crackers, or fresh vegetables, for serving

Instructions

  1. Drain the corn thoroughly. Rinse and drain the black beans, then soften the cream cheese.
  2. Cook the bacon until crisp, drain it on paper towels, and crumble it after cooling.
  3. Seed and finely dice the jalapeño. Finely dice the red onion and chop the green onion garnish.
  4. Add the softened cream cheese and mayonnaise to a large bowl. Stir until mostly smooth.
  5. Add the corn, black beans, cheddar, mozzarella, Parmesan, jalapeño, bacon, red onion, salt, and pepper.
  6. Fold the ingredients together until the creamy mixture coats the corn and beans evenly.
  7. Taste and adjust the salt or pepper only when needed.
  8. Transfer the dip to a serving bowl and garnish with chopped green onion.
  9. Serve immediately with tortilla chips, crackers, or fresh vegetables, or cover and chill briefly before serving.

Notes

  1. Drain the corn and beans thoroughly to keep the dip thick.
  2. Soften the cream cheese before mixing to prevent lumps.
  3. Remove the jalapeño seeds for mild heat, or leave some seeds for a spicier dip.
  4. Use crisp, well-drained bacon for the best texture.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  6. Do not freeze the dip because the creamy base may become grainy or watery.
