- 2 pounds lean ground beef
- 14 ounces canned corn, drained
- 14.5 ounces canned kidney beans, drained
- 2 cups salsa
- 1 ounce taco seasoning
- 1 cup water
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- 1½ cups shredded cheese
- 8.5 ounces cornbread muffin mix
- 8.25 ounces creamed corn
- 2 tablespoons milk
- ¼ cup sour cream
Instructions
- Preheat the oven to 350°F and spray a 9×13-inch baking dish with nonstick spray
- Brown the ground beef in a large skillet over medium-high heat and drain excess grease
- Add corn, kidney beans, salsa, taco seasoning, water, salt, pepper, and garlic powder and stir well
- Pour the beef mixture evenly into the prepared baking dish
- Sprinkle shredded cheese evenly over the beef mixture
- In a bowl, mix cornbread mix, creamed corn, milk, and sour cream until just combined
- Spoon the cornbread batter evenly over the cheese layer
- Bake for 35 to 40 minutes until the topping is golden and cooked through
- Let the casserole cool slightly before serving
