Description

A bold, cheesy, and spicy dip that’s perfect for parties, game nights, or any gathering! This hearty Tex-Mex delight is loaded with melted cheese, ground beef, chorizo, and jalapeños, making every bite an explosion of flavor. Serve it with tortilla chips, fresh veggies, or even nachos for the ultimate snacking experience.


Ingredients

  • 450g (1 lb) Velveeta cheese, cubed
  • 225g (8 oz) Pepper Jack cheese, shredded
  • 225g (8 oz) Cheddar cheese, shredded
  • 225g (½ lb) ground beef
  • 225g (½ lb) chorizo, crumbled
  • 1 small red onion, diced
  • 1 jalapeño, finely chopped
  • 1 can (400g/14 oz) diced tomatoes with green chilies
  • 120g (¾ cup) black beans, drained (optional)
  • 120g (¾ cup) corn kernels (optional)
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp garlic powder
  • 120ml (½ cup) milk or broth (as needed)
  • Fresh cilantro, chopped (for garnish)

Instructions

Stovetop Method:

  1. In a skillet over medium heat, cook the ground beef and chorizo until browned. Drain excess fat.
  2. Reduce heat to low and add Velveeta, Pepper Jack, and Cheddar cheese. Stir until melted and smooth. Add milk or broth if needed to thin the consistency.
  3. Mix in the onion, jalapeño, diced tomatoes with green chilies, black beans, corn, chili powder, cumin, and garlic powder. Stir well.
  4. Simmer for 5 minutes, stirring occasionally. Once fully combined and heated through, garnish with fresh cilantro.
  5. Serve warm with tortilla chips, nachos, or fresh veggies!

Slow Cooker Method:

  1. Cook ground beef and chorizo in a pan, then drain and transfer to a slow cooker.
  2. Add Velveeta, Pepper Jack, and Cheddar cheese along with all other ingredients. Stir to combine.
  3. Cook on LOW for 2-3 hours, stirring occasionally, until everything is melted and well blended.
  4. Garnish with cilantro and serve warm!

Notes

1️⃣ Keep the Dip Warm – Queso thickens as it cools! To keep it smooth and creamy, serve it in a slow cooker on the warm setting or reheat it with a splash of milk or broth.

2️⃣ Adjust the Spice Level – For a milder dip, skip the jalapeños and use mild cheese. For extra heat, add more chili powder or diced green chilies.

3️⃣ Make It Your Own – This dip is super versatile! Swap ground beef for sausage, add black beans or corn for texture, or even mix in a splash of beer for extra depth of flavor.
