Italian Sausage White Bean Soup is a rustic, hearty winter soup that brings cozy Italian flavors to your table. Ingredients
450 g / 1 lb Italian sausage (casings removed if needed)
4 strips bacon, chopped
½ medium onion, chopped
3 cloves garlic, minced
4 cans (400 g / 14 oz each) white beans (cannellini), drained
950 ml / 4 cups chicken broth
1.5 g / ¼ tsp Italian seasoning
1.5 g / ¼ tsp dried rosemary
2 small carrots, peeled and finely chopped
60 g / 2 cups fresh baby spinach (packed)
Salt and black pepper, to taste
Instructions
In a large soup pot, cook sausage and bacon over medium-high heat for 12–15 minutes until sausage is browned and bacon is crisp. Transfer to a plate, leaving about 2 tbsp fat in the pot.
Sauté onion for 3–5 minutes until softened and lightly golden.
Stir in garlic and cook for 30 seconds until fragrant.
Add beans, broth, Italian seasoning, and rosemary. Stir and scrape up browned bits.
Remove pot from heat. Purée part of the soup with an immersion blender (or blend 1–2 ladles in a blender) for creaminess.
Return sausage and bacon to the pot. Stir in carrots. Bring to a boil, then reduce heat to a simmer, partially covered, for 15–20 minutes until carrots are tender.
Add spinach, stirring until wilted (1–2 minutes).
Taste and adjust seasoning with salt and pepper. Serve hot with crusty bread or olive oil drizzle.
