Description

Crack Chicken Penne is a creamy one-pot pasta loaded with tender chicken, crispy bacon, ranch seasoning, and melted cheddar cheese for a comforting family dinner.


Ingredients

  • 4 slices thick-cut bacon
  • 1 pound boneless skinless chicken breast, bite-size pieces
  • 1 ounce ranch seasoning
  • 8 ounces penne pasta, uncooked
  • 3½ cups low-sodium chicken broth
  • 4 ounces cream cheese
  • 2 cups shredded cheddar cheese
  • 1 tablespoon chopped parsley

Instructions

  1. Cook bacon in a large pot until crispy and reserve, leaving some fat.
  2. Add chicken and cook until lightly browned.
  3. Stir in ranch seasoning to coat the chicken.
  4. Add penne and chicken broth and bring to a boil.
  5. Reduce heat, cover, and cook until pasta is al dente.
  6. Stir in cream cheese until sauce is creamy.
  7. Add bacon and most of the cheddar cheese and stir to melt.
  8. Top with remaining cheese, cover briefly, then serve garnished with parsley.

Notes

  1. Instant Pot and slow cooker versions can be made with reduced broth.
  2. Add extra broth when reheating to keep the pasta creamy.
