Description

Fresh Cranberry Blueberry Salad loaded with blueberries, spring mix greens, cucumber, mandarin oranges, dried cranberries, sunflower seeds, and homemade blueberry balsamic dressing.


Ingredients

Scale
  • 1 heaping cup blueberries
  • 1 bag spring mix salad greens
  • 1/2 English cucumber, chopped
  • 1/2 cup mandarin orange segments
  • 1/4 cup dried cranberries
  • 24 tablespoons roasted unsalted sunflower seeds
  • 1 cup blueberries
  • 1/3 cup balsamic vinegar
  • 2 tablespoons red wine vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup avocado oil

Instructions

  1. Blend blueberries, balsamic vinegar, red wine vinegar, Dijon mustard, honey, salt, and pepper until smooth.
  2. Slowly drizzle in avocado oil while blending until emulsified.
  3. Wash and dry salad greens.
  4. Combine greens, cucumber, and blueberries in a bowl.
  5. Toss lightly with dressing.
  6. Top with mandarin oranges, dried cranberries, and sunflower seeds.
  7. Serve immediately.

Notes

  1. Prepare salad ingredients ahead and add dressing before serving.
  2. Store dressing in the refrigerator up to 1 week.
  3. Recipe yields 2 large salads or 4 side salads.
