For the Bread:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 cup plain whole-milk yogurt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon grated orange zest
  • 1 teaspoon pure vanilla extract
  • ½ cup vegetable oil
  • 1 ½ cups fresh or frozen cranberries (thawed if frozen)

For the Glaze:

  • 1 cup confectioners’ sugar
  • 2 tablespoons fresh orange juice

Instructions

  • Preheat Oven & Prep Pan: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  • Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  • Mix Wet Ingredients: In a large bowl, whisk yogurt, sugar, eggs, orange zest, vanilla, and vegetable oil until smooth.
  • Combine Mixtures: Gradually fold dry ingredients into wet ingredients until just combined. Avoid overmixing.
  • Prepare Cranberries: Toss cranberries with a tablespoon of flour, then gently fold them into the batter.
  • Bake the Bread: Pour batter into the prepared pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the Bread: Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Make the Glaze: Whisk together confectioners’ sugar and fresh orange juice until smooth. Adjust consistency if needed.
  • Glaze the Bread: Once the bread has cooled, drizzle the glaze evenly over the top. Let it set for a few minutes before slicing.

Notes

1️⃣ Prevent Sinking Cranberries: Toss the cranberries in a tablespoon of flour before folding them into the batter. This prevents them from sinking to the bottom while baking.

2️⃣ Don’t Overmix the Batter: Mix the wet and dry ingredients gently until just combined. Overmixing can result in a dense and tough bread texture.

3️⃣ Cool Before Glazing: Allow the bread to cool completely before applying the glaze. Glazing warm bread will cause the glaze to melt and lose its glossy finish.
