Description
Crazy Good Casserole combines tender chicken, egg noodles, smoky bacon, sour cream, cream of chicken soup, and cheddar cheese in a creamy family-friendly dinner baked until bubbly and golden.
Ingredients
Scale
- 3 cups cooked chicken, shredded
- 2 cups egg noodles, uncooked
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese, divided
- 1/2 cup cooked and crumbled bacon, about 6 slices
- 1/2 cup milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt, adjusted to taste
- 2 tablespoons chopped green onions, optional
- Nonstick cooking spray or butter for the baking dish
Instructions
- Preheat the oven to 350°F. Lightly grease a 9×13-inch baking dish.
- Bring a large pot of salted water to a boil. Cook the egg noodles until just al dente, then drain thoroughly.
- Whisk the cream of chicken soup, sour cream, milk, garlic powder, onion powder, black pepper, and salt in a large bowl until smooth.
- Add the cooked noodles, shredded chicken, half of the cheddar cheese, and half of the bacon. Fold gently until evenly coated.
- Transfer the mixture to the prepared baking dish and spread it into an even layer.
- Sprinkle the remaining cheddar cheese and bacon evenly over the top.
- Cover loosely with foil and bake for 20 minutes.
- Remove the foil and bake for another 10 to 15 minutes, until the cheese melts and the edges bubble.
- Let the casserole rest for 5 minutes. Garnish with chopped green onions and serve warm.
Notes
- Cook the noodles only until al dente because they continue cooking in the oven.
- Rotisserie chicken works well and reduces preparation time.
- Use sharp cheddar for a stronger cheese flavor.
- Add a teaspoon of milk when reheating if the noodles have absorbed the sauce.
- Store leftovers in the refrigerator for up to 3 days.
- Freeze individual portions for up to 2 months and thaw overnight before reheating.
