Description

This creamy carrot raisin salad is a quick, fresh, and crunchy side dish made with a dairy-free dressing, apples, and pecans.


Ingredients

Scale
  • 4 cups grated carrots
  • 1 medium apple julienned
  • 1/4 cup chopped pecans
  • 1/4 cup golden raisins
  • 1/4 cup black raisins
  • 1/4 cup avocado mayo
  • 1 tablespoon maple syrup
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon kosher salt
  • Pinch black pepper

Instructions

  1. Grate carrots and julienne apple
  2. Add carrots, apple, pecans, and raisins to a bowl
  3. Whisk mayo, maple syrup, lemon juice, zest, salt, and pepper
  4. Pour dressing over salad and toss well
  5. Serve chilled or at room temperature
